Ingredients

olive oil or cooking spray
3 large eggs, beaten
3 lb. ground turkey
3/4 c. Italian breadcrumbs (or 3/4 c. plain breadcrumbs + 1.5 tsp Italian seasoning)
1.5 clove garlic, minced (or 0.5 tsp. finely crushed garlic)
1.5 tsp. Worcestershire sauce
1.5 tsp. thyme
1.5 Tbsp. tomato paste
salt and pepper
1/4 c. ketchup
1 Tbsp. brown sugar

Optional mashed potatoes:
3 large Idaho potatoes
milk
butter

Equipment

Muffin tin(s) and/or loaf pan(s)
Muffin papers and/or parchment paper (optional)
Large bowl
Small bowl
Whisk
Pastry brush
Measuring cups and spoons
Meat thermometer
If making mashed potatoes: large pot, cutting board, vegetable peeler, chef's knife, potato masher

Instructions

0. Mise en place. Gather your ingredients and tools. In the large bowl, whisk the eggs. In the small bowl, whisk the ketchup and brown sugar. Grease the muffin tins and/or loaf pans with the olive oil or cooking spray, or line them with muffin papers/parchment paper. Preheat the oven to 350F.

1. Combine the ingredients. In the large bowl, which already contains the whisked eggs, combine everything except the ketchup and brown sugar. Mix well with your hands. (It will be very cold! Take breaks.)

2. Shape, paint, and bake. Scoop 1/4-cup quantities of meat mixture into the cups of the muffin tins; it should make about 24 servings. Or form into a loaf. Or make one tray of muffins and a small loaf. Whatever. Paint the tops of the meatloaf with the ketchup and brown sugar mixture. Bake muffins at 350F for 35 minutes. Bake loaf at 350F until a meat thermometer in the coldest part registers 175F, about 50 minutes.

2.5. Make mashed potatoes. If you feel like making mashed potatoes, peel and slice the potatoes, put them in a pot, and cover them with cold water. Bring them to a boil and cook about 15 minutes after reaching the boiling point. Once they're soft, mash them up with butter and milk.

3. Serve and store. When the meatloaf is cooked, garnish with optional mashed potatoes and serve. Large or mini loafs can be stored in the fridge or freezer. If you plan to freeze them, don't put potatoes on them.
