One person's worth of non-dairy mozzarella

7 tsp pure soymilk
1 tsp mild vegetable oil
1.5 tsp tapioca flour (if you like your cheese less goopy and more stretchy, add 0.25 to 0.5 tsp)
0.5 tsp white miso paste, tahini, or dijon mustard
Whisk ingredients together in a nonstick pan. Heat over medium-low heat, stirring constantly with a flexible spatula, until the mixture thickens, curdles, and becomes a single gooey mass. Immediately pour over pizza or pasta.
